Best way to re-paint New Bike ???

Ok so Im getting this bike brand new and dont like the color or lettering. I am going to re-paint it, but what is the best way to take off the new factory paint. Should I go down to bare metal ? Will a good scuffing & sanding be OK ? What grits sandpaper should I use ?
