Turning a 21 gear mtb into a 7 gear.

Hi all,

I think this is the right area to post this. My main ride is a motorized Pacifca Scorpio. It has a shamino 21 speed shifter gear thingy (for lack of better word).

I want to basically free up handlebar space and go to only one gear shifter. The shifters are thumb shifters.

Anyone have any suggestions on how to approach this?
 
is it 3 gears on the pedals and 7 in back? if so just take the shifter off and put the chain on which gear you wan tit to stay on you can even put a jump stop to stop it from jumping to the smaller gear. if its a all in one hub then im not to sure on that
 
Shift into the middle chainring, then remove the grips possibly the brake lever and the shifter on the left handlebar. Take out the Bowden cable, set aside the items. Then reattach the brake lever and grip.
 
Did anyone ever find out how to do this with a one sprocket on crank?I'm thinking about doing this with a one wider crank arm set crank with one sprocket instead of three sprocket.I need the clearance for centrifugal clutch.
