Carburetor problems

I've been away from building motorized bikes for quite some time but just just purchased a high performance wildcat80 from Californiamotorbikes and have the engine running but I can't shut it down by choking the engine. Any suggestions would be greatly appreciated!
 
I installed a thumb throttle that didn't have one, I found out I had developed a leak where the reed housing attaches to the cylinder,fixed that and I'm using the pz16mm carburetor that came with the engine I adjusted the pilot jet and so far seems to be ok. Thanks for responding Greg 58
 
I have acquired a MZ65 pipe, the real deal and not sure if I should install or wait till I reduce the oil to fuel ratio as I'm still in the break in period any thoughts on that would be appreciated.
