What size bicycle rims can simplex servicycle tires fit on?

Simplex tires are 26 x 2.50

Seems to me you ought to be able to fit those tires on a 2.125 rim. I have 2.45 tires on a set of old Schwinn rims.

I have a simplex 26x2.5 mounted on a Husky HD steel rimmed coaster wheel
I have read that they are very hard to mount on an aluminum rim, but had no real hassle mounting on my steel rim
