Sprocket assembly question

the kit I purchased only came with the 3 support plates with 3 holes in each.

But the video from BikeBerry has the 3 plates with 3 holes in each as well as 2 plates for the opposite side of the grommets, one of those has 5 holes and one has 4 holes.

All of the kits I can find available for purchase online seem to only show the 3 plates with 3 holes in each. How important is having the 2 other plates? And If I only have those 3 support plates would they go on the sprocket side or the wheel side?

Here are some pictures of what I have vs what is shown in the video. The top picture is what I have. The bottom is the assembly video.

those are two diff types - kit comes with EITHER 3 plates or 2, not both

most three plate kits make a slightly wider circle than the two plate kits, but all will fit most wheels
