I was pondering over what to use my 7.5V/.5a white wire for, and a thought occurred to me.

Why not wire up a USB port? I could use it to charge my iPod, GPS, or even lights.

I'm not sure about this, but I think the maximum voltage of a USB port is 5V. Would I need a resistor or anything?

Sound like a good idea? Or a bad idea?

Of course it's a good idea!
The sticky part is designing a circuit that would regulate and stabilize the output.

That is a great idea! I use my iPhone for tunes when I'm riding and half of my gagdets charge usb. If you get it working post a picture I'd love to see this idea in action.
