jumping the sprocket is indicative of bad alignment
your sprocket needs to spin evenly up and down and side to side
the front and back sprockets also need to be pretty straight to each other

having trouble with rear axle set-up... chain for motor keeps jumping off the sprocket. what am i doing wrong. getting frustrated.:-|| please e-mail me at "[email protected]"...

Azbill is exactly right. You have an alignment problem. Either in your installation of the rag joint, or the alignment of your two sprockets, or tensioner.
If you continue to have problems getting the rag joint to work properly you can purchase the Aluminum Sprocket Adaptor from Jim at Manic Mechanic. That will solve your problem!
