Right now I'm running on 26x2.125 tires.I'm thinking if I replace these I might drop down too a slightly thinner wheel. Is it possible to use a thinner tire on the existing rims. Thanks, Ron

yes. your rim is most likely not that wide. I took 2.125 tires off and run 195 now. Same rims... I also run 195 on rims that had 175 tires.

Also is there a good place to get complete wheel with 12 gauge spokes or send wheel to get 12 gauge spokes installed?

I buy my tires at wallymart but I have a room full of used ones as well so im not good to ask. yes you can use your rims and hubs most any bike shop will do it for you. or you can try I guess.

How wide are your rims? I have always run 26x2.125s, but my old rims were 1.75" wide (and worked fine). My current wheels have a 2.125" rim (and 11 ga spokes).

As for drilling the hubs and rims, a switch to 12 ga is pretty standard so a decent shop should be able to take care of that including drilling.
