Well I want to build an ebikr and had a few general questions.

Was going to use this battery

I am 190-195 lbs I need it for getting me mainly up
Decent sized hills and would like to drive on the bike trails
I do not need to go fast but would like it to pull my 18 mo
Old son in his cart behind the bike every so often
please give me some advise
Putting this on a cheapo Walmart dual suspension mongoose

With a 1000 watt motor you'll probably have enough power to accelerate without needing to help by pedaling but may still need to help it along going up a hill... I'm not very familiar with the electric bikes but 1000 watts is about 1.3 or 1.4 horsepower so that might help you with your decision on what kit to buy...
From what I've seen, I don't have any first hand experience with electric bikes, but a 3000 watt bike will go just over 35 mph and get you over most hills without the need to pedal.

You should look up your local statutes. Some places have limits on how many watts you can use. 3000 watts is over 4 hp. The main reason I'm telling you this is because you said you'll be pulling your child behind you. This is going to draw attention you may otherwise not have when riding by yourself.
