that's a pretty nice way to do it.

another simple method i use is with a holesaw and a drill.

you screw the sprocket down on a block of wood, find the center of the hole and go to town.

you need the wood so the pilot bit in the holesaw will stay centered. it'll wobble a bit as the holesaw gouges away at the sprocket, but the center hole of the sprocket doesn't need to be perfectly aligned, it just needs to be big enough for the dust cap to clear.
