Safe wheels?

I have a 36T sprocket and my bike can just touch 60kph at max RPM. However I'm a little worried about the wheels holding up. Is there any kind of wheels I should look into that can safely ride at 80kph? Or will any set do? My back rim is a Shimano Speed Demon rim with a 26x2.10 knobby tire, the front is a stock Mongoose Creekside rim with the stock 26x1.95 road tire still on it. I just dont want to be riding at 80kph when I get the motor tuned up to that, and suddenly have a tire fly off (I had that happen in a car once, it's not fun then, and I'm fairly certain it would be less fun on a bike where both wheels are pretty critical)

I think its more maintaining and maintenance that makes a wheel safer. Using a good HD wheel is not a bad idea.

For cruiser I usually run Husky wheels and for MTB I like the double wall Supra D wheels using Quando TX hubs. Can't really say they are safer but I've had no problems.
