So, on the exhaust on my bike has it's 2 bolts, on the female side of the bolt ( barrel) one of the threads seems to be partly stripped.

I don't want to drill it out, as i've had bad experiences with that.

I'm thinking epoxy and aluminim dust to permanently fix the exhaust in place.

I keep having to take the exhaust off because gaskets are blowing a few times a week, it's starting to really annoying me.

I'm going to make an exhaust gasket from 1mm thick aluminum sheet and silicon gasket.

Impression, do you have enough thread left so that you can put a couple of washers under the nut so that it will not be where the stripped threads are??????????////

well - other than drill & tap (my preferred method) there's these;

Threaded insert - Wikipedia, the free encyclopedia

Helicoils are bit of a pain - but sometimes the only option, partic for such a high-heat area, but you'll still have to drill out what remains of the old threads. These just make it so it's the same barrel size when you're done instead of oversize.
