Is it possible to build and engine from scratch using all of the parts from all of the websites? I want to know how these things work inside and out and build a real solid motor using top parts. So, is it possible?

I wouldn't try it! Most engines from China come from different factories & they all have small differences; (so the parts aren't always interchangeable.)
You're better off just buying a good complete engine from a good vendor. ;)

if i was to break it down what would i upgrade on the engine?
not so much upgrade but "tune" all the gaskets are restrictive, you would want to sand or file off any rough edges inside the manifold and even in some parts of the jug, some engines are better than others! you could check what type of wrist pin you have, and connecting rod bushing, most engines have roller bearings but some have bushings, basically just look for any obvious defects, if its not all clean and smooth and you see slag, then remove it, every little bit helps and its fun to see how these little engines work, there really isnt much to em
