I'm in the process of building a BTR with the help of a very talented motorbicycling forum member and I don't want to just stick any motor in the bike.
I've heard a lot of good talk about the PK80/68.5 slant and the Grubee skyhawk GT5. slant. I will admit I'm not a mechanic and realize I will have to do a complete tear down to do a thurough inspection of everything, the more I read the more I get confused, but these are the two I'm considering.
Can anyone give me some good advice?????

Really, it isn't so much whether you get a PK 80 or a GT-5. It's whether you get a dealer who'll stand by what they sell, who'll write back when you write them, and who will help you with problems and replace something that is damaged or missing when obligated to. That sort of thing is worth more than the engine in the long run.
