Do new gaskets have to replaced after removal?

My engine will be coming shortly. As a part of the build, I want to open the motor and 'de-bur' the parts but also to get to learn the parts, to become one with the motor. My dad said that I would have to replace all of the gaskets though.

Is this true if the motor hasn't been run?

Depends how cleanly it comes apart I think; also, you can use equivalents sometimes made from better material. Against that, be aware gaskets have a measurable thickness, and incorrect replacements can throw the fit of things out. The old saying is true, measure twice, cut once.
