I have the same problem. I already tried making wide pedals out of wood.
But that turned out to be to "thick". The wood thickness was just enough that the pedal would get stuck under the transfer case. So I took em off. Just to lazy to go to metal straps similar to what you did.

I have found that with pants on, the rubbing against the transfer case isn't bad at all. But my right knee gets a little strained when I first start out.

Soooo Im gonna revisit my pedal extension doing something very similar to what you did.
