I will be looking forward to your pics of the build. It sounds like it will be a good one!

I also recommend getting better brakes, even if they are side pull calipers. Equip them with Koolstop Salmon pads and you will be ok, not outstanding but a heck of alot better off than just a coaster brake. Coaster brakes really are not up to the task of stopping an motorized bicycle in an emergency situation, and if the chain buggers up, then what are you going to do?
Keep in mind that an motorized bicycle typically travels at near twice the speed of what a bicycle is designed to do. If you want to travel quickly, you need to be able to stop safely and quickly too.

All that said, it sounds like you are off to a great start!
