So now that I got it all together I start pedaling and get a good speed going. I engage the clutch and the engine starts. I try to twist the throttle, nothing happens. About 5-10 seconds after the engine starts...it dies... please help!

It seems like you are hearing the sounds of the engine cycling as you, by pedal power, try to start it. That does not mean it is actually running, it's just making intake and exhaust sounds as it is pumping air through itself.

That is the first step in diagnosing a no start situation.
Let us know what the spark plug looks like.
Shiny wet or bone dry.

the spark plug is beautiful, I actually just changed it for a new one and changed the boot. I pedal and then let go of the clutch lever, the engine starts and then it sputters and then stops... for those few seconds i hear it on i try to twist the throttle and it does nothing...
This could sound funny so please bare with me. Are you peddling the bike continually after you let the clutch out ? These bikes do need peddle assist or the motor will stall out. In better words once you let the clutch out continue to vigorously peddle until the engine gets enough momentum to take the work load all by it self.
No, it's not with pedaling because I get a good speed, release the clutch lever and keep pedaling but the engine doesn't sound right...I wait a little bit and twist the throttle and nothing happens...also when I come to a stop, the engine dies. please help!
Was the spark plug white , grey, light brown, dark brown or black?
Was it wet with fuel or dry?

The spark plug was not gunked up, it was completely clean...as I would expect it to be considering the bike has never been driven before.
Check out the OMG I have to tune a CNS thread out. Really all I've done to it is drilled the carb jet out to #66 and moved the c-clip down to the second to last notch. And it's pretty juicy, I was riding around with a broking throttle to just see if the chain would stay on and all of a sudden the throttle got stuck wide open and I was flying through the yard hahah. I just ordered a new one from sick bike parts.

Look at the spark plug porcelain where the center electrode comes up through the center of it, on the big threaded end.
If the spark plug is white and dry, then you are not getting any fuel.
If the spark plug is white and wet then you are not getting any spark.
If the spark plug is white period, then the engine has never even fired off yet and like I have been saying all along, all you are hearing is the sound of the engine pumping air through itself. Nothing more.
If the spark plug has any color to it at all then you actually are getting the engine to run, but.....
If the spark plug is tan then you are ok, of it is brown to dark brown then you are still ok. If it is black, the carburetor is jetted too rich (too much fuel) and may have drowned out the spark plug.
I really am trying to help you out here, but if you cannot answer simple questions, I give up.

The spark plug is dry and white...however there are a little bit of black pieces around the white threads...looks kinda like soot, not much tho...sorry for no pics, i'll try to put some up tomorrow.
Any color on the threads does not matter. The color of the porcelain surrounding the center electrode is what matters.
Simply judging by the fact that it is white and dry tells me that you are having a fuel delivery issue, as in none or not enough fuel.

I'm assuming he has no trouble shooting skills and although the given info seems to indicate no fuel....i wouldn't count out no spark....without grasp of function...he may have very well arrived home from where ever...read your post and pulled the plug.
True enough, but a no spark condition would have left the brand new spark plug white and "soggy" wet with unburned fuel.
