I don't think I've ever seen a photo of a build on a bike with 27" wheels. I know the skinny tires aren't the best thing for an MB, but I have a bike with 27' wheels and I'm wondering if there is a good reason why I shouldn't do a build on it.

Yes, that is exactly what I had in mind. You say the 40t sprocket is from the original chain ring? Does that mean it was one of the sprockets already mounted on the bike?
