Default Motorized Bicycle Rear Wheel

Has anyone tried to remove a 7 speed cassette and replace it with a single freewheel sprocket? The blue bike I built has a 7 speed rim on it and I want to convert it to a single (mainly for looks, I don't use the different gears). I tried to mount a regular freewheel cruiser rim but the Mountain bike frame is too wide and the chains (sprockets) do not line up properly. I've researched the idea and found out that it is possible to do. Just curious as to if anyone has done this...Was it a pain? Easy? Any other ideas as to how to achieve this? I read about it but I have never done it. I was going to when I bought that huge mountain bike but since the motor wouldn't fit without a lot of work, I just junked out the bike instead. But I did keep the tires.
